Shrimp Scampi Kabob Recipe

Servings: 4-6


  • 20 medium shrimp (peeled and cleaned)
  • 12 mushrooms (whole)
  • 12 cherry tomatoes
  • 1 green pepper (cut into 1" squares)
  • 1 zucchini (cut into 1/2" rounds)
  • 1 large red onion (optional)
  • 4 skewers (wood or metal)
  • 4 tablespoons butter (salted)
  • 1/2 cup olive oil
  • 2 large garlic cloves (crushed)
  • 1/8 tespoon curry powder
  • salt and pepper to taste
  • 1/2 cup white wine

Melt butter at low temperature and stir in olive oil, garlic, curry powder, salt and pepper. Once melted, remove to a bowl and combine all ingredients. Allow to marinade for about 1 hour in refrigerator.

Assemble 5 shrimp, 2 cherry tomato, 1 mushroom, 1 zucchini round, 1 green pepper and 1 red onion piece in a decorative fashion on skewer.

Pour 1/2 cup white wine into flavor ring of your Stove Top Grill and preheat to medium heat. Brush kabobs with olive oil and grill each skewer about 4 to 5 minutes on each side while brushing on excess scampi sauce.

You can substitute almost any meat or fish and veggie combination for this recipe.
