Ingredients:
- 20 medium shrimp (peeled and cleaned)
- 12 mushrooms (whole)
- 12 cherry tomatoes
- 1 green pepper (cut into 1" squares)
- 1 zucchini (cut into 1/2" rounds)
- 1 large red onion (optional)
- 4 skewers (wood or metal)
- 4 tablespoons butter (salted)
- 1/2 cup olive oil
- 2 large garlic cloves (crushed)
- 1/8 tespoon curry powder
- salt and pepper to taste
- 1/2 cup white wine
Preparation:
Melt butter at low temperature and stir in olive oil, garlic,
curry powder, salt and pepper. Once melted, remove to a bowl
and combine all ingredients. Allow to marinade for about 1
hour in refrigerator.
Assemble 5 shrimp, 2 cherry tomato, 1 mushroom, 1 zucchini round,
1 green pepper and 1 red onion piece in a decorative fashion
on skewer.
Pour 1/2 cup white wine into flavor ring of your Stove
Top Grill and preheat to medium heat. Brush kabobs with olive
oil and grill each skewer about 4 to 5 minutes on each side
while brushing on excess scampi sauce.
Comments:
You can substitute almost any meat or fish and veggie combination
