Ingredients:
- 4 diagonal slices of italian bread (about 1/3 in thick)
- olive oil
- 4 garlic cloves (whole)
- 1 small onion (sliced thin)
- 4 slices ham or smoked turkey
- 1tsp. thyme
- 1 10oz bag fresh spinach
- 4 roma tomatoes (diced)
- 1/2 cup water
Preparation:
Pour 1/2 cup water into flavor ring and preheat grill on medium
heat. Brush slices of bread with olive oil for flavor and place
on grill. Toast until each side is crisped and lightly browned.
Remove bread slices and drizzle one side with 1 tsp. olive
oil. Meanwhile, grill garlic and onions until lightly brown
and tender. Remove and set aside. Grill ham or turkey until
tender and grill marks appear. Put 1 meat slice over each slice
of toast. Slice garlic into thin slices and add with onions
to each slice. Add spinach to grill until wilted. Cover half
the meat slices with spinach and the other half with tomatoes.
Drizzle with olive oil and add salt and pepper to taste.
Comments:
On the side of each dish, try a wedge of provolone cheese to
compliment this light yet tasty dish. You can omitt the meat
and use more veggies like asparagus, zucchini, peppers or
eggplant for a vegetarian brushetta.
